The growing consumer demand for foods without chemical preservatives has caused all efforts to focus in on the discovery of new natural ingredients. Fungi chitosan has been accepted as aid-processing additive of natural origin in Australia, New Zealand, EU and USA.

At Handary, Chitoly® AB fungal chitosan is refined from an insoluble chitosan preparation derived from the cell walls of Agaricus bisporus. The product is used as aid-processing fiber to reduce quality loss caused by microbial spoilage, enzymatic, non-enzymatic browning and quick degradation of vitamins during the shelf-life of fresh (-cut) fruit and vegetable and juices.
