Epolyly® H25 is a pure ε-Polylysine HCL concentrate, derived naturally from a controlled fermentation of Streptomyces diastatochromogenes, which is an ideal natural broad-spectrum antimicrobial for extending the shelf life of a variety of foods and beverages.

ε –Polylysine has been approved as a food antimicrobial in 4 countries, including China, Japan, South Korea, and the United States. The regulations governing the use Epolyly® H25 vary considerably in the countries in which it is currently approved.

Epolyly® H25 enters the cytoplasm of bacterial cells, increases the level of ROS and the reacts with genome DNA, which induces cell death. Thus it’s an active formula to eliminate bacterial (gram positive and gram negative) population in food matrixes. Epolyly® H25 is a liquid concentrate of ε –Polylysine HCL, customized to homogenise into the foods with ease. 
10-20 ml/Kg of Epolyly® H25 was added in Surimi and was effective to reduce Total Plate Count. The treatment extended the shelf life to 6 days, stored at 5°C.
